I feel like Easter is really sneaking up fast on me. I love everything about Easter from the reason we have Easter to the family and food. I tend to be a holiday hog….I like to have all of the major holidays at our house and I like to make all of the food myself. I love the stress and the challenge of juggling all of the dishes. So far nobody seems to mind me taking over.
I still haven’t quite put together my meal plan for Easter…except for one of the desserts. I am going retro this year with an old favorite we know as 7up Salad. I had to change the name of this to Sprite Salad because I didnt buy 7up, but I did have Sprite. It’s all lemon-lime, right? This turned out so delicious and I certainly recommend ending Easter Dinner with this refreshing dessert. It sure to be a crowd pleaser for the young and the old….and those in between.
On with the recipe….
I start off with an 8 ounce package of cream cheese and a small box of lime jello into a bowl.
Whisk those two ingredients together until well blended.
In a saucepan, pour a can of Sprite over medium heat. Add 2 cups of mini marshmallows.
Stir over heat until completely melted.
Pour the Sprite and marshmallow mixture into cream cheese and jello mixture.
Whisk until completely combined.
Add a can of drained pineapple tidbits or crushed pineapple (whichever you prefer).
Cover with plastic wrap and refrigerate overnight or until it has set. I am impatient and checked it after 3 hours and it was set…but you can let it set overnight while you put together Easter baskets or prep other yummy dishes for your Easter dinner.So, after it has set fold in a container of Cool Whip (thawed).
There you have it! A refreshing dessert to top off the end of a beautiful Easter day!
Ingredients8 ounce package of cream cheese (softened)
Small box of lime Jello
12 ounce can of Sprite
2 cups of mini marshmallows
1 can of pineapple tidbits or crushed pineapple
1 container of thawed Cool Whip
In a medium bowl combine softened cream cheese and lime Jello powder.
In a saucepan, over medium heat, pour in can of Sprite and add 2 cups of mini marshmallows. Stir over heat until marshmallows have melted.
Pour Sprite mixture into cream cheese mixture. Whisk until combined completely.
Add canned pineapple.
Cover and refrigerate for about 3 hours up to overnight (until set).
Fold in container of thawed Cool Whip until completely combined.
Refrigerate until ready to serve.
