No Bake Chocolate Oatmeal Bars

Today I had a chocolate craving….brownies or chocolate chip cookies. Well, I had everything but eggs. I have chickens! I am suppose to always have eggs, but my girls are slacking. So I went for the no bake route. I am so glad that I did because these are soooooo good…maybe too good. I cant eat just one. Just a warning though, this recipe calls for 2 sticks of butter. It seems like too much and I’m sure you could probably cut back a little but 2 sticks worked better than I thought it would. This treat definitely satisfied my chocolate craving!

Now on with the recipe…

Line a 8 x 8 baking dish with parchment paper. Leave some parchment paper hanging over the edges so you can pull the bars right out of the dish.

In a saucepan melt 1 cup of butter and 1/2 cup of brown sugar.

Stir over low heat until brown sugar is dissolved.

Add 3 cups of oats and 1 tsp vanilla. I like using the quick cooking oats for this.

Stir until combined. Cook over low heat for a about 3 to 4 minutes.

Press half of the oat mixture to the bottom of your baking dish.

In a small microwave safe bowl melt together 1 cup of semisweet chocolate chips and a 1/2 cup of peanut butter. Pour that mixture over the first layer of oats in your baking dish.

Sprinkle the other half of the oat mixture on top of the melted chocolate pressing gently into the chocolate. Refrigerate for 3 hours up to overnight.

Cut in to squares and enjoy!

No Bake Chocolate Oatmeal Bars

Ingredients

  • 1 cup butter
  • 1/2 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

Directions

-Line an 8-inch or 9-inch square baking dish with parchment paper and set aside.

-Melt butter and brown sugar in large saucepan over medium heat, until the butter has melted and the sugar has dissolved. Stir in vanilla. Mix in the oats.

-Cook over low heat 3 to 4 minutes, or until ingredients are well blended.

-Pour half of the oat mixture into the prepared baking dish and press out evenly.

-Melt the peanut butter and chocolate chips together in a small microwave-safe bowl and stir until it’s smooth.

-Pour the chocolate mixture over the oat mixture in the pan. Sprinkle remaining oat mixture over the chocolate layer, pressing in gently.

-Refrigerate 3 hours or overnight. Cut in to squares.
